Ingredients
For 4 servings
- 4 salmon fillet
- 4 tablespoon honey
- 6 tablespoon butter
- 2 tablespoon fresh dill
- 1 teaspoon lemon zest
- 2 tablespoon lemon juice
- 2 clove garlic
- 2 tablespoon olive oil
- 2 cup broccoli florets
- 1 cup cherry tomato
- 1 red onion
- 1 bell pepper
- sea salt — to taste
- black pepper — to taste
Instructions
- 1
Preheat the oven to 400°F (200°C).
- 2
In a small saucepan over low heat, melt 2 tablespoons of butter and mix in the honey, 1 tablespoon of lemon juice, and minced garlic cloves. Stir until well combined and set aside.
- 3
Line a baking sheet with parchment paper and place the salmon fillets on it. Brush the honey glaze evenly over the top of each fillet and season with salt and black pepper.
- 4
Cut the red onion and bell pepper into chunks. In a large bowl, toss the broccoli florets, cherry tomatoes, onion chunks, and bell pepper chunks with olive oil, salt, and pepper.
- 5
Spread the vegetables around the salmon on the baking sheet.
- 6
Place the baking sheet in the oven and roast for 25-30 minutes, until the salmon is cooked through and the vegetables are tender.
- 7
While the salmon and vegetables are roasting, prepare the herbed butter by combining the remaining 4 tablespoons of butter with chopped fresh dill and lemon zest in a small bowl. Mix until smooth.
- 8
Remove the baking sheet from the oven. Place a dollop of herbed butter on top of each salmon fillet and let it melt slightly before serving.
- 9
Serve the honey-glazed salmon with roasted vegetables immediately, garnished with a drizzle of remaining lemon juice.
