Ingredients
For 4 servings
- 2 cups red lentils
- 4 cups water
- 2 tablespoons olive oil
- 2 tablespoons taco seasoning
- 8 soft tortillas
- 2 avocado
- 2 tomato
- 0.5 red onion
- 2 tablespoons lime juice
- 0.5 cups cilantro
- salt — to taste
- pepper — to taste
Instructions
- 1
Rinse the red lentils thoroughly under cold water.
- 2
In a medium saucepan, add the red lentils and water. Bring to a boil over medium-high heat, then reduce to a simmer and cook for 10-12 minutes until the lentils are tender and water is absorbed.
- 3
While lentils are cooking, chop the avocado, tomato, and red onion into small pieces. Combine in a bowl with lime juice, chopped cilantro, salt, and pepper to make the salsa.
- 4
Once the lentils are cooked, drain any excess water. In a large pan, heat olive oil over medium heat. Add the cooked lentils and taco seasoning, stirring until well combined and fragrant.
- 5
Warm the tortillas in a dry pan over medium heat for about 1 minute on each side.
- 6
Assemble the tacos by placing the lentil mixture on each tortilla, topping with the avocado and tomato salsa.
- 7
Serve immediately.
