  • 4 zucchini
  • 2 cups canned lentils
  • 2 tablespoons olive oil
  • 1 onion
  • 2 cloves garlic
  • 1 cup tomato sauce
  • 1 teaspoon dried oregano
  • salt — to taste
  • black pepper — to taste
  • 1 cup mozzarella cheese

Instructions

    Preheat oven to 375°F (190°C).

    Cut the zucchinis in half lengthwise and scoop out the centers to create boats. Set aside.
