  • 400 g pork loin
  • 200 g green beans
  • 2 tbsp red curry paste
  • 200 ml coconut milk
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 tbsp vegetable oil
  • 2 cloves garlic
  • 1 lime
  • 200 g jasmine rice
  • fresh cilantro — to taste

Instructions

    Cook jasmine rice according to package instructions and set aside.

    Slice the pork loin thinly and set aside. Trim and halve the green beans.

    Mince the garlic cloves.

    Heat vegetable oil in a large pan over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.

    Add the sliced pork to the pan and cook until it's no longer pink, about 4-5 minutes.
