Ingredients

  • 2 cups brown rice
  • 1 cup green lentils
  • 4 cups water
  • 1 onion
  • 2 carrot
  • 1 cup frozen peas
  • 2 eggs
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • salt — to taste
  • black pepper — to taste

Instructions

    Cook the brown rice according to package instructions and set aside.

    Rinse the lentils under cold water, then add them and 2 cups of water to a pot. Bring to a boil, reduce to a simmer, and cook for about 15 minutes until tender. Drain and set aside.

    Dice the onion and carrots. Heat vegetable oil in a large pan over medium heat.

    Add the onion and carrots to the pan, sauté for 5 minutes until softened.

    Push the vegetables to one side of the pan, crack in the eggs, and scramble them until cooked through.

    Add the cooked rice, lentils, and frozen peas to the pan. Stir well to combine.

    Season with soy sauce, salt, and black pepper. Cook for an additional 3 minutes, stirring frequently.
