Ingredients

  • 1 cup green lentils
  • 1 onion
  • 2 carrot
  • 1 14 oz can canned diced tomatoes
  • 1 cup frozen peas
  • 2 tablespoons vegetable oil
  • 1 tablespoon curry powder
  • 2 cloves garlic
  • 2 cups water
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse the green lentils under cold water.

    Chop the onion and carrots into small pieces.

    Mince the garlic cloves.

    Heat vegetable oil in a large pot over medium heat.

    Add the onion and garlic to the pot and sauté until the onion is translucent, about 3 minutes.

    Stir in the chopped carrots and curry powder, cooking for another 2 minutes.

    Add the rinsed lentils, canned tomatoes with their juice, and water to the pot.

    Bring to a boil, then reduce the heat and let simmer for 10-15 minutes, or until the lentils are tender.
