  • 200 grams spinach
  • 400 milliliters coconut milk
  • 2 tablespoons olive oil
  • 1 onion
  • 2 cloves garlic
  • 1 teaspoon ginger
  • 2 tablespoons curry powder
  • salt — to taste
  • black pepper — to taste

Instructions

    Place the eggs in a pot, cover with water, and bring to a boil. Cook for 8 minutes, then transfer to an ice bath to cool. Peel the eggs and set aside.
