- 1 cup quinoa
- 2.5 cups water
- 2 cups frozen mixed vegetables
- 2 cups spinach
- 1 tablespoon olive oil
- 2 tablespoons lemon juice
- 1 teaspoon salt

Rinse red lentils and quinoa under cold water.
