- 600 g butter beans
- 450 g frozen mixed vegetables
- 1 onion
- 2 cloves garlic
- 240 ml vegetable broth
- 500 g potato
- 1 tbsp olive oil
- salt — to taste
- black pepper — to taste

Preheat oven to 200°C (392°F).

Peel and dice the potatoes, then boil in salted water for 10 minutes until tender. Drain and mash.

While potatoes are cooking, dice the onion and mince the garlic.

Heat olive oil in a pan over medium heat, sauté onion and garlic for 3 minutes until soft.

Add frozen mixed vegetables to the pan and cook for another 5 minutes.

Add butter beans and vegetable broth to the vegetable mixture, simmer for 3 minutes, then season with salt and black pepper.
