Ingredients

- 2 cups white rice
- 1 cup dried lentils
- 3 cups water
- 4 eggs
- 2 carrot
- 1 cup frozen peas
- 1 onion
- 2 clove garlic
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 teaspoon ground black pepper
- salt — to taste

Rinse the white rice and dried lentils under cold water.

In a pot, add the white rice, dried lentils, and 3 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until the rice and lentils are cooked and water is absorbed. Set aside.

While the rice and lentils are cooking, dice the carrot and onion, and mince the garlic.

In a large pan, heat 1 tablespoon of vegetable oil over medium heat. Add the diced onion, minced garlic, and diced carrots. Sauté for 3-4 minutes until the vegetables are softened.

Add the frozen peas to the pan and cook for another 2 minutes.

Push the vegetables to the side of the pan, and crack the eggs into the empty space. Scramble the eggs until fully cooked.

Add the cooked rice and lentils to the pan with the vegetables and eggs.

Pour the soy sauce over the mixture, add ground black pepper and salt to taste, and stir everything together until well combined and heated through.
