Ingredients

- 2 cups sushi rice
- 2.5 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 4 nori sheets
- 16 cooked shrimp
- 1 cucumber
- 1 avocado
- 1 carrot
- soy sauce — to taste
- wasabi — to taste
- pickled ginger — to taste

Rinse the sushi rice under cold water until the water runs clear.

Combine sushi rice and water in a saucepan, bring to a boil, then reduce heat to low, cover, and cook for 20 minutes.

While rice is cooking, mix rice vinegar, sugar, and salt in a small saucepan over low heat until sugar dissolves, then let it cool.

Transfer cooked rice to a large bowl and gently fold in the vinegar mixture, then allow the rice to cool to room temperature.
