- 500 g pork loin
- 4 bell pepper
- 1 cup quinoa
- 2 cups chicken broth
- 2 tbsp olive oil
- 1 onion
- 2 clove garlic
- 1 tsp paprika
- 1 tsp cumin
- salt — to taste
- black pepper — to taste

Preheat the oven to 375°F (190°C).

Rinse the quinoa under cold water, then combine with chicken broth in a pot. Bring to a boil, cover, and reduce to a simmer for about 15 minutes or until liquid is absorbed.
