Ingredients

For 4 servings

  • 2 cups cottage cheese
  • 12 ounces pasta
  • 1/2 cup basil pesto
  • 1 cup cherry tomatoes
  • 2 cups baby spinach
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • salt — to taste
  • black pepper — to taste
  • 1/4 cup parmesan cheese

Instructions

  1. 1

Cook pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

  2. 2

In a large pan over medium heat, add olive oil and minced garlic. Sauté for 1-2 minutes until fragrant.

  3. 3

Add cherry tomatoes to the pan and cook for 3-4 minutes until they start to soften.

  4. 4

Stir in baby spinach and cook until wilted, about 2 minutes.

  5. 5

Reduce heat to low and add cooked pasta, cottage cheese, basil pesto, salt, and black pepper. Mix well, adding reserved pasta water a little at a time until a creamy sauce forms.

  6. 6

Heat through for another 2 minutes, then remove from heat and top with grated parmesan cheese before serving.
