Ingredients

  • 8 flour tortillas
  • 1 can (15 oz) black beans
  • 2 cups cheddar cheese
  • 1 onion
  • 2 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • salt — to taste
  • black pepper — to taste
  • 2 tablespoons olive oil
  • 1/4 cup cilantro

Instructions

    Drain and rinse the black beans.

    Chop the onion and mince the garlic.

    Heat 1 tablespoon of olive oil in a pan over medium heat.

    Add the onion and cook until soft, about 3 minutes.

    Add the garlic, cumin, and oregano to the pan, and cook for an additional 1 minute.

    Stir in the black beans and season with salt and pepper.

    Cook until the beans are heated through, about 3 minutes, then remove from heat.

    Stir in chopped cilantro.

    Heat a large skillet over medium heat and add a small amount of olive oil.

    Place a tortilla in the skillet, sprinkle with 1/4 cup of cheddar cheese, add a layer of the black bean mixture, and top with another 1/4 cup of cheese.
