Ingredients

  • 2 cup split peas
  • 1 cup brown rice
  • 3 cup frozen mixed vegetables
  • 2 tablespoon curry powder
  • 2 tablespoon olive oil
  • 2 clove garlic
  • salt — to taste
  • black pepper — to taste
  • 2 tablespoon lemon juice
  • 2 tablespoon fresh cilantro

Instructions

    Rinse and sort the split peas. In a large pot, combine 2 cups of water with the split peas and bring to a boil. Reduce heat and simmer for about 10 minutes until tender.

    While the peas cook, in a separate pot, cook the brown rice according to package instructions.
