- 2 tbsp olive oil
- 1 onion
- 2 carrot
- 2 celery stalk
- 1 red bell pepper
- 1 zucchini
- 3 clove garlic
- 400 g diced tomatoes
- 4 cup vegetable broth
- 1 tsp dried thyme
- 1 tsp dried oregano
- ground black pepper — to taste
- salt — to taste

Dice the tempeh into bite-sized cubes. Finely chop the onion, carrot, celery, red bell pepper, and zucchini. Mince the garlic cloves.

In a large pot, heat olive oil over medium heat. Add the onion, carrot, and celery, and sauté for 5-7 minutes until softened.
