  • 1 can black beans
  • 8 tortilla
  • 1 cup cheddar cheese
  • 1 red onion
  • 2 clove garlic
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 2 tablespoon olive oil
  • salt — to taste
  • black pepper — to taste
  • 2 cup enchilada sauce
  • 1 lime
  • 1/4 cup cilantro

    Peel and dice the sweet potatoes into small cubes.
