Ingredients

For 4 servings

  • 600 g ground beef
  • 4 zucchini
  • 2 avocado
  • 2 tbsp olive oil
  • 2 clove garlic
  • 2 tbsp lemon juice
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Spiralize the zucchinis into noodles using a spiralizer and set aside.

  2. 2

In a large skillet over medium-high heat, add 1 tbsp of olive oil and cook the ground beef until browned and fully cooked, about 6-8 minutes. Season with salt and black pepper. Remove from skillet and set aside.

  3. 3

In the same skillet, add the remaining 1 tbsp of olive oil. Add minced garlic and sauté for 1 minute until fragrant.

  4. 4

Add the zucchini noodles to the skillet and sauté for 3-4 minutes until just tender. Season with salt and pepper to taste.

  5. 5

In a blender, combine avocados, lemon juice, salt, and pepper. Blend until smooth and creamy.

  6. 6

Add the cooked ground beef back to the skillet with the zucchini noodles, then pour the avocado sauce over and toss to combine.

  7. 7

Serve immediately, garnished with additional black pepper if desired.
