  • 4 chicken thigh
  • 2 tablespoon olive oil
  • 1 onion
  • 3 clove garlic
  • 2 carrot
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 cup white rice
  • 2 cup chicken broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 0.5 cup parmesan cheese

Instructions

    Preheat oven to 375°F (190°C).

    Heat olive oil in a large skillet over medium heat.

    Season chicken thighs with salt and pepper.

    Add chicken thighs to the skillet and brown on both sides, about 5 minutes per side. Remove and set aside.

    In the same skillet, add chopped onion and minced garlic. Sauté until onion is translucent.
