Ingredients

For 4 servings

  • 600 grams ground turkey
  • 2 tablespoons olive oil
  • 1 lettuce
  • 1 red bell pepper
  • 1 cucumber
  • 2 avocado
  • 200 grams cherry tomatoes
  • 100 grams feta cheese
  • 2 tablespoons lemon juice
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

  2. 2

Add the ground turkey, season with salt and black pepper, and cook until fully browned and cooked through, about 8 minutes, ensuring it reaches an internal temperature of 165°F (74°C).

  3. 3

While the turkey cooks, wash and chop the lettuce, red bell pepper, and cucumber, and halve the cherry tomatoes. Peel, pit, and slice the avocados.

  4. 4

In a large salad bowl, combine the chopped lettuce, red bell pepper, cucumber, cherry tomatoes, and avocado.

  5. 5

Once the turkey is cooked, allow it to cool slightly before adding it to the salad bowl.

  6. 6

Crumble the feta cheese over the salad.

  7. 7

In a small bowl, whisk together the remaining 1 tablespoon of olive oil and lemon juice, then drizzle over the salad.

  8. 8

Toss the salad gently to combine all ingredients evenly. Adjust seasoning with salt and black pepper to taste.
