Ingredients

For 4 servings

  • 4 salmon fillets
  • 150 grams goat cheese
  • 2 tablespoons fresh dill
  • 2 tablespoons fresh chives
  • 1 teaspoon lemon zest
  • 500 grams asparagus
  • 3 tablespoons olive oil
  • salt — to taste
  • black pepper — to taste
  • 1 tablespoon lemon juice

Instructions

  1. 1

Preheat the oven to 400°F (200°C).

  2. 2

Trim the ends of the asparagus and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil, season with salt and pepper, and toss to coat. Roast in the oven for 15 minutes or until tender.

  3. 3

While the asparagus is roasting, combine goat cheese, fresh dill, fresh chives, and lemon zest in a bowl. Mix well and set aside.

  4. 4

Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil.

  5. 5

Pat dry the salmon fillets with paper towels and season both sides with salt and pepper.

  6. 6

Place the salmon fillets skin-side down in the skillet. Cook for 4-5 minutes until the skin is crispy.

  7. 7

Carefully flip the salmon and cook for another 3-4 minutes until the salmon is just cooked through.

  8. 8

Remove the salmon from the skillet and let it rest for a minute. Top each fillet with a generous spoonful of the herbed goat cheese mixture.

  9. 9

Drizzle the roasted asparagus with lemon juice.

  10. 10

Serve the salmon fillets alongside the roasted asparagus.
