Ingredients

  • 2 cans chickpeas
  • 1 cup quinoa
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 red bell pepper
  • 1 cucumber
  • 1 cup cherry tomatoes
  • 2 cups spinach
  • 1 lemon
  • 2 tablespoons tahini
  • 1 clove garlic
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse and drain the chickpeas, then set aside.

    In a saucepan, combine quinoa and water, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

    While quinoa is cooking, chop the red bell pepper and cucumber into bite-sized pieces, and halve the cherry tomatoes.
