Ingredients

For 4 servings

  • 300 g lentil pasta
  • 150 g spinach
  • 200 g cherry tomatoes
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 40 g parmesan cheese
  • salt — to taste
  • black pepper — to taste
  • 2 liters water

Instructions

  1. 1

Boil 2 liters of water with a pinch of salt in a large pot.

  2. 2

Add the lentil pasta and cook according to package instructions, usually about 7-9 minutes.

  3. 3

While the pasta cooks, heat olive oil in a large pan over medium heat.

  4. 4

Mince the garlic cloves and add them to the pan, sautéing for 1 minute until fragrant.

  5. 5

Halve the cherry tomatoes and add them to the pan, cooking for another 2-3 minutes until they start to soften.

  6. 6

Add the spinach to the pan and cook, stirring often, until wilted, about 2 minutes.

  7. 7

Reserve 1/2 cup of pasta cooking water, then drain the pasta.

  8. 8

Add the drained pasta to the pan with vegetables. Pour in a little reserved pasta water if needed to combine.

  9. 9

Grate the parmesan cheese and sprinkle over the pasta. Season with salt and black pepper to taste.

  10. 10

Toss everything together over low heat until combined and serve hot.
