Ingredients

- 1 cup green lentils
- 2 potato
- 1 onion
- 2 carrot
- 1 can canned diced tomatoes
- 3 clove garlic
- 2 tablespoon vegetable oil
- 2 teaspoon curry powder
- 1 teaspoon ground cumin
- salt — to taste
- black pepper — to taste
- 3 cups water
Instructions

Rinse the green lentils under cold water and set aside.

Peel and dice the potatoes and carrots. Finely chop the onion and garlic.

Heat the vegetable oil in a large pot over medium heat. Add the onion and garlic, sauté until softened.

Stir in the curry powder and cumin, and cook for another minute until fragrant.

Add the diced potatoes, carrots, canned diced tomatoes (with juices), green lentils, and water to the pot.
