Ingredients

- 1 cup green lentils
- 3 cups water
- 1 carrot
- 1 potato
- 1 onion
- 1 cup frozen peas
- 1 can canned diced tomatoes
- 1 tablespoon vegetable oil
- 2 cloves garlic
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon chili powder
- salt — to taste
- black pepper — to taste
Instructions

Rinse the green lentils under cold water and drain.

In a large pot, add the green lentils and 3 cups of water. Cook over medium heat for 15 minutes.

While the lentils are cooking, peel and dice the carrot and potato, dice the onion, and mince the garlic.

In a separate pan, heat vegetable oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.

Add the diced carrot, potato, ground cumin, ground turmeric, and chili powder to the pan, and cook for another 5 minutes, stirring occasionally.

Add the canned diced tomatoes and frozen peas to the pan, and stir to combine.

Transfer the vegetable mixture to the pot with the lentils. Season with salt and black pepper to taste.
