Ingredients
For 4 servings
- 2 cups white rice
- 4 cups water
- 4 egg
- 2 cups frozen mixed vegetables
- 1 onion
- 4 tablespoons soy sauce
- 2 tablespoons vegetable oil
- salt — to taste
- black pepper — to taste
Instructions
- 1
Rinse the white rice under cold water until the water runs clear. Combine rice and water in a pot and bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until the rice is fully cooked and water is absorbed.
- 2
While the rice is cooking, dice the onion finely.
- 3
In a large pan or wok, heat vegetable oil over medium heat. Add the diced onions and sauté until translucent, about 3-4 minutes.
- 4
Push the onions to one side of the pan and crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix with the onions.
- 5
Add the frozen mixed vegetables to the pan and stir-fry for 3 minutes, allowing them to thaw and warm through.
- 6
Add the cooked rice to the pan, breaking up any clumps, and stir to combine with the vegetables and eggs.
- 7
Pour in the soy sauce and season with salt and black pepper to taste. Stir everything together for another 2-3 minutes until well combined and heated through.
- 8
Serve hot, adjusting seasoning if necessary.
