- 1 onion
- 3 clove garlic
- 2 carrot
- 2 stalk celery
- 1 red bell pepper
- 28 ounce canned diced tomatoes
- 4 cup vegetable broth
- 15 ounce canned chickpeas
- 1 cup brown lentils
- 1 bay leaf
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 4 cup spinach
- salt — to taste
- black pepper — to taste
- 1 cup plain yogurt
- 1 lemon

Dice the onion, mince the garlic, and chop the carrots, celery, and red bell pepper.

In a large pot, heat olive oil over medium heat. Add the onion and garlic, sautéing until the onion is translucent, about 5 minutes.

Add the carrots, celery, and red bell pepper to the pot. Cook for an additional 5 minutes, stirring occasionally.

Pour in the canned diced tomatoes and vegetable broth. Stir to combine.

Rinse the canned chickpeas under cold water and drain. Add them to the pot along with the brown lentils, bay leaf, oregano, and thyme.
