Ingredients

For 4 servings

  • 1 cup brown rice
  • 1 cup dried lentils
  • 2 cups frozen mixed vegetables
  • 1 onion
  • 2 cloves garlic
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 4 cups water
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Rinse the brown rice and lentils under cold water.

  2. 2

In a pot, combine rinsed brown rice, lentils, and 4 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until both are tender.

  3. 3

Meanwhile, chop the onion and mince the garlic cloves.

  4. 4

In a large pan, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until onions become translucent, about 3 minutes.

  5. 5

Add the frozen mixed vegetables to the pan and cook for an additional 4 minutes, stirring occasionally.

  6. 6

Drain any excess water from the rice and lentils, then add them to the vegetable mixture in the pan.

  7. 7

Stir in soy sauce, salt, and pepper to taste, mixing well to combine all flavors.

  8. 8

Cook for another 2 minutes, allowing the flavors to meld together. Serve hot.
