Ingredients

For 4 servings

  • 1 cup red lentils
  • 2 cups water
  • 1 cup white rice
  • 1 onion
  • 1 carrot
  • 1 cup cabbage
  • 1 cup canned tomatoes
  • 2 cloves garlic
  • 2 tablespoons curry powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 cups water

Instructions

  1. 1

Rinse the red lentils under cold water until the water runs clear.

  2. 2

In a pot, bring 2 cups of water to a boil and add the red lentils. Reduce heat to low, cover, and simmer for about 15 minutes until the lentils are tender.

  3. 3

While the lentils cook, rinse the rice under cold water and set it aside.

  4. 4

Chop the onion, carrot, and cabbage. Mince the garlic cloves.

  5. 5

In a large pan over medium heat, add olive oil. Sauté the onion, carrot, and garlic until softened, about 5 minutes.

  6. 6

Add the cabbage, canned tomatoes, curry powder, salt, and pepper to the pan. Stir and cook for another 5 minutes.

  7. 7

Add the cooked lentils to the pan and stir to combine. Adjust seasoning with more salt and pepper if desired.

  8. 8

In a separate pot, bring 2 cups of water to a boil, add the rice, cover, and reduce the heat to low. Cook for about 10 minutes or until water is absorbed and rice is tender.

  9. 9

Serve the lentil curry over the cooked rice.
