Ingredients

- 1 cup dried black beans
- 1 cup white rice
- 1 onion
- 2 clove garlic
- 1 can canned diced tomatoes
- 1 can canned corn
- 1 tbsp chili powder
- 1 tsp cumin
- salt — to taste
- black pepper — to taste
- 1 tbsp olive oil

Rinse and drain the black beans. Cook the black beans in a pot with 3 cups of water until tender, about 1 hour. Drain and set aside.

Cook the white rice according to package instructions and set aside.

In a large pan, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until the onion is translucent.
