Ingredients

For 4 servings

  • 1 cup green lentils
  • 2 cups white rice
  • 2 cups frozen mixed vegetables
  • 1 onion
  • 2 cloves garlic
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • ground black pepper — to taste
  • salt — to taste
  • 3 cups water

Instructions

  1. 1

Rinse the green lentils under cold water and drain.

  2. 2

In a medium pot, combine the lentils with 3 cups of water and a pinch of salt. Bring to a boil, then reduce the heat and simmer for 15 minutes or until tender. Drain and set aside.

  3. 3

While the lentils are cooking, cook the white rice according to package instructions.

  4. 4

Chop the onion and mince the garlic cloves.

  5. 5

In a large pan, heat vegetable oil over medium heat. Add the onion and garlic, sautéing until the onion is translucent.

  6. 6

Add the cooked rice, cooked lentils, and frozen mixed vegetables to the pan. Stir well to combine.

  7. 7

Drizzle soy sauce over the mixture, and season with ground black pepper and salt to taste. Stir-fry for 5 minutes until the vegetables are heated through and everything is well combined.

  8. 8

Serve hot, garnished with additional soy sauce if desired.
