Ingredients

- 1 cup green lentils
- 2 cups white rice
- 2 cups frozen mixed vegetables
- 1 onion
- 2 cloves garlic
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- ground black pepper — to taste
- salt — to taste
- 3 cups water

Rinse the green lentils under cold water and drain.

In a medium pot, combine the lentils with 3 cups of water and a pinch of salt. Bring to a boil, then reduce the heat and simmer for 15 minutes or until tender. Drain and set aside.

While the lentils are cooking, cook the white rice according to package instructions.

Chop the onion and mince the garlic cloves.
