- 4 bell pepper
- 1 cup brown rice
- 400 g black beans
- 400 g canned diced tomatoes
- 4 green onion
- 2 clove garlic
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- salt — to taste
- black pepper — to taste

Cook the brown rice according to package instructions.

Preheat the oven to 375°F (190°C).

Halve the bell peppers lengthwise and remove the seeds.

In a pan, heat olive oil over medium heat. Add minced garlic and chopped green onions, sauté until fragrant.

Add diced pork loin to the pan and cook until lightly browned, about 5-7 minutes.
