Ingredients

- 400 g seitan
- 2 tbsp olive oil
- 1 red bell pepper
- 1 onion
- 1 zucchini
- 2 clove garlic
- 1 cup frozen corn
- 400 g canned black beans
- 1 tsp ground cumin
- 1 tsp paprika
- salt — to taste
- black pepper — to taste
- 1/4 cup fresh cilantro
Instructions

Dice the seitan into bite-sized pieces and set aside.

Chop the red bell pepper and onion, slice the zucchini, and mince the garlic.

Heat olive oil in a large skillet over medium heat.

Add the onion and garlic, sauté for 2-3 minutes until the onion becomes translucent.

Add the red bell pepper and zucchini, sauté for another 3 minutes until they start to soften.

Stir in the seitan, frozen corn, and black beans (drained and rinsed).
