Ingredients
For 4 servings
- 2 chicken breast
- 0.5 cup all-purpose flour
- salt — to taste
- black pepper — to taste
- 2 tablespoon olive oil
- 2 tablespoon butter
- 8 ounce mushrooms
- 2 clove garlic
- 0.5 cup marsala wine
- 0.5 cup chicken broth
- 2 tablespoon parsley
Instructions
- 1
Slice the chicken breasts in half horizontally to create four thin cutlets.
- 2
Season the flour with salt and black pepper, then dredge each chicken cutlet in the flour mixture, shaking off any excess.
- 3
Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
- 4
Add the chicken cutlets to the skillet and cook for 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
- 5
In the same skillet, add the remaining tablespoon of butter and sliced mushrooms. Cook until the mushrooms are browned, about 5 minutes.
- 6
Add minced garlic to the mushrooms and cook for an additional minute until fragrant.
- 7
Pour in the Marsala wine and chicken broth, scraping up any browned bits from the bottom of the skillet.
- 8
Allow the sauce to simmer for about 5 minutes until it reduces slightly.
- 9
Return the chicken cutlets to the skillet and let them heat through, spooning the sauce over the chicken.
- 10
Garnish with chopped parsley before serving.
