  • 1.5 cups Arborio rice
  • 4 cups vegetable broth
  • 0.5 cup Parmesan cheese
  • 1 lemon
  • 4 tablespoons olive oil
  • 2 tablespoons butter
  • 1 shallot
  • 2 cloves garlic
  • 0.5 cup fresh parsley
  • 0.25 cup fresh dill
  • 1 tablespoon fresh thyme
  • salt — to taste
  • black pepper — to taste

Instructions

    Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add finely chopped shallot and minced garlic, sauté until fragrant.
