Ingredients
For 4 servings
- 2 sweet potato
- 1 cup canned corn
- 1/2 cup all-purpose flour
- 1 egg
- 2 green onion
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons vegetable oil
Instructions
- 1
Peel and grate the sweet potatoes using a box grater and place in a large bowl.
- 2
Drain the canned corn and add it to the bowl with the grated sweet potatoes.
- 3
Thinly slice the green onions and add them to the bowl.
- 4
Add the flour, egg, garlic powder, salt, and black pepper to the bowl and mix until well combined.
- 5
Heat vegetable oil in a large skillet over medium heat.
- 6
Scoop about 1/4 cup of the sweet potato mixture into the pan, flattening slightly to form a fritter.
- 7
Cook for 3-4 minutes on each side, or until golden brown and crispy. Cook in batches to avoid overcrowding the pan.
- 8
Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil.
- 9
Serve the fritters warm, optionally with a dollop of yogurt or sour cream.
