Ingredients

For 4 servings

  • 600 grams pork loin
  • 2 cups brown rice
  • 2 cups frozen mixed vegetables
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • salt — to taste
  • black pepper — to taste
  • 2 stalks green onion

Instructions

  1. 1

Cook the brown rice according to package instructions.

  2. 2

While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

  3. 3

Add minced garlic to the skillet and sauté for 30 seconds until fragrant.

  4. 4

Slice the pork loin into thin strips and season with salt and black pepper.

  5. 5

Add the pork strips to the skillet and cook for about 4-5 minutes until browned and cooked through.

  6. 6

Remove the pork from the skillet and set aside.

  7. 7

In the same skillet, add the remaining olive oil and the frozen mixed vegetables. Sauté for 3-4 minutes until heated through.

  11. 11

Garnish with sliced green onions before serving.
