Ingredients

- 1 cup red lentils
- 2 cups water
- 1 tablespoon olive oil
- 1 onion
- 1 red bell pepper
- 2 cups spinach
- 1 teaspoon garlic powder
- 1/2 teaspoon turmeric
- 1/2 teaspoon cumin
- salt — to taste
- black pepper — to taste

Rinse the red lentils under cold water and drain.

In a medium saucepan, combine the lentils and water. Bring to a boil, then reduce the heat to low and simmer for 10 minutes or until the lentils are tender and have absorbed most of the water.
