Ingredients
For 4 servings
- 500 g ground beef
- 8 flour tortillas
- 1 onion
- 2 cloves garlic
- 2 tablespoons olive oil
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 400 g canned tomato sauce
- 1 cup water
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 cups cheddar cheese
- 0.25 cup cilantro
Instructions
- 1
Preheat the oven to 350°F (175°C).
- 2
Finely chop the onion and mince the garlic.
- 3
In a large skillet, heat olive oil over medium heat. Add the onion and garlic, cooking until softened, about 5 minutes.
- 4
Add the ground beef to the skillet, cooking until browned and crumbled, about 7 minutes. Drain excess fat if needed.
- 5
Stir in the chili powder, cumin, salt, and black pepper into the beef mixture. Cook for 1 additional minute.
- 6
Pour in the canned tomato sauce and water. Stir to combine and let simmer for 5 minutes.
- 7
Place a spoonful of the beef mixture onto each tortilla and roll up tightly. Arrange the filled tortillas seam-side down in a baking dish.
- 8
Pour any remaining sauce over the enchiladas and top with cheddar cheese.
- 9
Bake in the preheated oven for 15 minutes, until the cheese is melted and bubbly.
- 10
Garnish with chopped cilantro before serving.
