Ingredients

  • 400 g chicken breast
  • 8 corn tortillas
  • 400 g green salsa (salsa verde)
  • 200 g cheddar cheese
  • 1 onion
  • 2 clove garlic
  • 1 bunch cilantro
  • 2 tbsp vegetable oil
  • salt — to taste
  • pepper — to taste

Instructions

    Preheat the oven to 180°C (350°F).

    In a medium pot, add the chicken breast and cover with water. Add a pinch of salt and bring to a boil. Reduce heat and simmer for 15 minutes or until cooked through. Remove chicken and shred with forks.

    Finely chop the onion and mince the garlic. In a skillet, heat vegetable oil over medium heat. Sauté the onion and garlic until soft and translucent, about 3 minutes.

    Add the shredded chicken to the skillet, season with salt and pepper, and stir well to combine. Cook for another 2 minutes and remove from heat.

    Warm the corn tortillas in a dry skillet for about 30 seconds each side to make them pliable.
