Ingredients

For 4 servings

  • 500 g chicken thigh
  • 1 zucchini
  • 1 cup canned corn
  • 2 egg
  • 1/2 cup all-purpose flour
  • 2 green onion
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. 1

Finely dice the chicken thighs and place them in a large bowl.

  2. 2

Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.

  3. 3

Add the grated zucchini, canned corn, and chopped green onions to the chicken.

  4. 4

In a separate bowl, whisk the eggs and add them to the chicken mixture along with flour, salt, and pepper. Mix well until combined.

  5. 5

Heat olive oil in a large non-stick skillet over medium heat.

  6. 6

Scoop 1/4 cup of the mixture into the skillet, flattening slightly to form a patty. Cook for 3-4 minutes on each side or until golden brown and cooked through.

  7. 7

Repeat for the remaining mixture, adding more oil if necessary.

  8. 8

    Serve warm and enjoy!
