Ingredients

For 4 servings

  • 600 g frozen shelled edamame
  • 2 carrot
  • 1 red bell pepper
  • 1 onion
  • 2 clove garlic
  • 800 g canned diced tomatoes
  • 4 cup vegetable broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 2 tbsp olive oil
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Dice the onion, carrot, and red bell pepper. Mince the garlic cloves.

  2. 2

In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 3 minutes.

  3. 3

Add the diced carrot and red bell pepper to the pot. Continue to sauté for another 3 minutes.

  4. 4

Stir in the ground cumin and chili powder, and cook for 1 minute until fragrant.

  5. 5

Add the canned diced tomatoes and vegetable broth to the pot, then bring to a boil.

  6. 6

Once boiling, add the frozen shelled edamame. Reduce the heat to a simmer and cook for 5 minutes.

  7. 7

Season with salt and black pepper to taste. Stir and cook for another 2 minutes until everything is heated through.

  8. 8

Serve the stew hot, garnished with additional black pepper if desired.
