Ingredients

- 600 g frozen shelled edamame
- 2 carrot
- 1 red bell pepper
- 1 onion
- 2 clove garlic
- 800 g canned diced tomatoes
- 4 cup vegetable broth
- 1 tsp ground cumin
- 1 tsp chili powder
- 2 tbsp olive oil
- salt — to taste
- black pepper — to taste
Instructions

Dice the onion, carrot, and red bell pepper. Mince the garlic cloves.

In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 3 minutes.

Add the diced carrot and red bell pepper to the pot. Continue to sauté for another 3 minutes.

Stir in the ground cumin and chili powder, and cook for 1 minute until fragrant.

Add the canned diced tomatoes and vegetable broth to the pot, then bring to a boil.

Once boiling, add the frozen shelled edamame. Reduce the heat to a simmer and cook for 5 minutes.
