  • 4 salmon fillet
  • 2 tablespoons olive oil
  • 1 lemon
  • 2 tablespoons fresh parsley
  • 2 cloves garlic
  • 1 cup couscous
  • 1 cup water
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup cherry tomatoes
  • 2 cups spinach

    Preheat the oven to 400°F (200°C).

    Zest and juice the lemon, and mince the garlic cloves.

    Place salmon fillets on a baking sheet lined with parchment paper.

    Drizzle 1 tablespoon olive oil, lemon juice, lemon zest, minced garlic, 1 tablespoon parsley, salt, and black pepper over the salmon.
