Ingredients

For 4 servings

  • 300 g dried pasta
  • 400 g canned kidney beans
  • 400 g canned diced tomatoes
  • 1 onion
  • 2 clove garlic
  • 2 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Cook the pasta in a pot of boiling salted water according to package instructions, then drain and set aside.

  2. 2

While the pasta is cooking, dice the onion and mince the garlic.

  3. 3

Heat the olive oil in a large pan over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.

  4. 4

Add the canned diced tomatoes, canned kidney beans (drained and rinsed), dried oregano, dried basil, salt, and black pepper to the pan.

  5. 5

Simmer the mixture for 5 minutes, stirring occasionally.

  6. 6

Combine the cooked pasta with the tomato and bean sauce, stirring to coat the pasta evenly.

  7. 7

Serve hot, adjusting seasoning with additional salt and pepper if needed.
